Eggy in a Basket Grilled Cheese

When my husband makes breakfast, this is his favorite thing to cook!  Eggy in a basket is also known as egg in a frame, frog in the hole, egg with a hat, bird’s nest, bird in a nest, and egg in a hole.  It can be documented back to around 1900.  Last Sunday my husband made his own version of this well known breakfast for our family.

Eggy in a basket is made by cutting a hole in a piece of bread, putting the bread in a skillet to toast, and cracking an egg into the hole.  My husband makes an ooey-gooey grilled cheese sandwich with egg.  He chooses American cheese because of the way it melts.

Ingredients:

2 slices of your favorite toast

2 eggs

1 t butter

2-4 slices of American cheese

Instructions:

  1. Butter both sides of the bread.
  2. Using a glass, cut the middle out of both slices of bread.
  3. Heat a skillet or a griddle to medium high. I use the griddle because I like having the extra space.
  4. Place the toast and the cut out centers on the griddle.
  5. Break one egg into the center of each piece of toast. Allow it to cook until the egg is cooked enough on the bottom to hold the weight of the egg.
  6. Flip the toast centers, then gently flip the egg-filled toast. If you do it correctly, the yolk will not be broken.  Place the cheese you want on top of each side of the sandwich.
  7. Cook until cheese is melted. Place one piece of toast on top of the other, cheese sides together.
  8. Do not cut this sandwich until it is on your plate! The yolk should be runny in the middle still.  When you cut open the sandwich, the yolk drips down over the sandwich and onto the plate.  I use my sandwich to sop it up as I eat.
