Air Fried Meatloaf Balls

I am always on the search for new appetizers! People tend to eat while they party if you give them bite-sized bits to chomp on. Having a meal made of hours d’oeuvres is one of my favorite ways to host a get-together. There are fewer dishes to clean or throw away. People don’t have to decide between eating and continuing to have fun. Everyone can bring something small and it doesn’t matter if it goes together. I also do not have to worry as much about finding something that everyone will eat as a main dish. When I make hours d’oeuvres, there will be enough variety that everyone will find something they like.

My newest addition to my recipe collection is meatloaf meatballs. You can serve them with a side of ketchup to dip. You could also make meatloaf skewers. Just stick one of the meatballs with a toothpick. Take a little bit of mashed potatoes and roll them into a ball. Toss them in the air fryer for a minute or two at 400. Put the mashed potato ball on top of the meatloaf ball. You can drizzle with brown gravy or serve with a side to dip. They were delicious every way we served them!

Half a pound of ground beef makes about a dozen of these. The recipe is for two pounds; about 48 meatballs. I start the recipe the same way I make meatloaf. I usually cook them in rounds so they’re hot throughout the night. If I put them in a crock pot or another hot-holding method, they lose the crispyness they gain from being in the air-fryer. I may as well put them in the oven if I am going to put them in my crockpot all evening. If I don’t cook all of them, I can freeze the rest and eat them for snacks with my family at our next movie night.

Instructions:

Preheat your air fryer to 400F

Using a cheese grater, shred one half of one onion.

In a large mixing bowl, use your hands to mix all other ingredients.

Roll the mixture into balls. I use my cookie scoop to ensure my balls all have the same amount of meat.

Place your first batch into the air fryer. You can cook as many of them as you want at one time. I usually cook a dozen at a time and put the rest in a container in the refrigerator to be tossed in when the first ones are gone. Turn the air fryer on 400 for 8 minutes, or use the steak setting on the menu.

Plate with gravy or ketchup to dip.
