Sweet and Spicy Korean Chicken

A few weeks ago, I decided to try to help keep my family’s food budget under control.  One of the biggest steps was preparing more food ourselves, but another was finding the right recipes.  This is one of the tasty recipes I ended up making.  I went to the store with the plan to make an awesome Korean beef recipe I found when cruising through Pintrest.  We didn’t end up purchasing ground beef during that trip.  Instead, we substituted it for frozen chicken breasts.  Instead of trying to come up with a whole new dinner, I just adapted the recipe.  It ended up being delicious!

Rice is a great addition to your meal when you’re trying to save some money.  Half a cup of uncooked rice costs me about $.07.  The chicken was about $.08/oz, which ends up being about $.66/serving.  Even with the extra spices and honey, our dinner was far less than $5 for our whole dinner.  My husband loves this recipe!  It’s just hot enough for flavor.  I love it because it’s easy.  The part that takes the longest is waiting for the rice to cook.

Total Time: 30 Minutes

Ingredients for two:

16 oz Raw Chicken Breast, sliced

Cooking oil (the less you can use, the better)

1 T minced garlic

¼ c brown sugar

1 T honey

¼ c soy sauce

¼ t ground ginger

2 T siracha

¼ t chili pepper

¼ t black pepper

1 c uncooked rice

2 t sesame seeds

 

Instructions:

  1. Prepare rice according to directions on package. Bring 2.5 c water to a boil.  Add 1 T butter, a pinch of salt and 1 c uncooked rice.  Cover tightly and simmer for about 20 minutes.
  2. Slice chicken breasts.
  3. Brown chicken in a nonstick skillet. Coat the skillet with cooking oil.  Add garlic and sliced chicken.  Cook until internal temperature of chicken is 165 degrees F.  While the chicken is cooking, you can begin the next step.
  4. In another bowl, mix soy sauce, honey, brown sugar, black pepper, chili powder, and siracha. It should be a little thinner than a paste.  Add cooking oil until the mixture is thin enough to pour.
  5. When the chicken is fully cooked, pour the sauce into the pan. Coat all of your meat with it.  Let it simmer for about 5 minutes. Stir frequently to keep the honey from burning.
  6. Plate the meal by putting half of the rice on the bottom of each bowl. Top the rice with half of the chicken.  Sprinkle with sesame seeds and enjoy!
