Deconstructed Sushi
Let’s face it, when you’re camping, you have to make some sacrifices. Sometimes the craving for something like sushi just will not go away. Preparing raw seafood for consumption in a place without a proper refrigerator sounds like it is asking for trouble, but luckily my favorite roll is a Philadelphia roll, which is often made with cooked salmon. Or maybe the idea of rolling the sushi into the seaweed wrap just sounds like it is a little above your culinary skill. This quick little mash-up only takes a few minutes, a few dollars, and is very filling!

Ingredients per person
1 c cooked rice or Uncle Ben’s Ready Rice
1 packet salmon or tuna
1.5 oz cream cheese
1 tsp soy sauce
1 tsp sesame seeds
Preparation (at home):
Cook rice according to instructions on package. If you purchase Ready Rice, you can skip this step. The first weekend we did this, I used regular rice since I had time to prepare it before we left.
Cut cream cheese into ¼ in cubes.
Return cream cheese to container or zip top bag. Add soy sauce to cream cheese and refrigerate.
Preparation (at camp):
Mix all ingredients together. You can serve this dish in a bowl or in a tortilla. I always bring a few packets of soy sauce as well. Next time, we will try it with cucumbers and avocado as well.
